Chef Peter Olson’s Recipe of the Month: Shrimp Tomato Alfredo Spaghetti

You will need:
1 medium yellow onion, diced
2 Tablespoons minced garlic
1/4 Cup Butter
1 Cup Heavy Cream
2 Cups Marinara Sauce
1 Tablespoon Dried Basil
2 teaspoons Crushed Red Pepper
1 cup Grated Parmesan
1 Pound 41-50 count tail off Raw Shrimp
12 ounces Spaghetti Pasta
Salt and Pepper to taste
1.) Cook Pasta according to directions on package
2.) In a large saute pan, melt butter, saute onions and garlic with basil, crushed red pepper, when soft add shrimp. Stir for 3 minutes or until shrimp is cooked pink.
3.) Lower heat, add heavy cream, marinara, and cheese, stirring until thickened. Season with salt and pepper.
4.) While the shrimp sauce is hot, combine with cooked pasta, serve immediately. Garnish with more Parmesan as needed.
