Chef Peter Olson’s Recipe of the Month: Shrimp Tomato Alfredo Spaghetti

You will need: 1 medium yellow onion, diced 2 Tablespoons minced garlic 1/4 Cup Butter 1 Cup Heavy Cream 2 Cups Marinara Sauce 1 Tablespoon Dried Basil 2 teaspoons Crushed Red Pepper 1 cup Grated Parmesan 1 Pound 41-50 count tail off Raw Shrimp 12 ounces Spaghetti Pasta Salt and Pepper to taste 1.) Cook Pasta according to directions on package 2.) In a large saute pan, melt butter, saute onions and garlic with basil, crushed red pepper, when soft add shrimp. Stir for 3 minutes or until shrimp is cooked pink. 3.) Lower heat, add heavy cream, marinara, and cheese, stirring until thickened. Season with salt and pepper. 4.)
