Mmmm, bacon. Is there anything that makes a dish more delicious?
This Monday, come in to Potash Markets to sample some of Spencer’s bacon and sausage.
Spencer’s was founded by Nicholas Spencer who moved to Chicago from London a few years ago to be with his now-wife and missed the tastes of home. So he started his own company that makes back-bacon and sausage (known as “bangers”).
Spencer’s “back-bacon” is so called because it is made with pork loin, making it leaner than American bacon, which is made from pork belly. The bacon has a unique flavor and is made using a dry-cure process that takes up to 10 days.
The bangers have a softer texture and are less salty than American sausage, and they’re made with high-quality herbs, spices and breadcrumbs. The sausages come in two varieties: traditional pork and pork with herbs.
In England and Ireland, bangers aren’t just eaten at breakfast. Instead, they’re often a main entrée and are served with mashed potatoes (simply called “mash”) and peas. Rumor has it that Kate Winslet served traditional bangers and mash at her wedding, and Spencer says Prince Charles is a big fan of them as well.
